Festive Pomegranate Salad Recipe

The Festive Season is one of our favourite times of the year! Here is one of our Naturopath Evie’s favorite festive salad recipes, full of fibre and antioxidants to support both your gut microbiome and also your skin during the festive season – but of course it’s delicious too which is just as important!

Ingredients:

  • 2 cups cooked quinoa/barley/brown rice
  • ½ cup of roasted almonds
  • 1 cup of spinach
  • 12/-1 bunch of fresh mint leaves
  • 4 tbsp of pumpkin/hemp seeds
  • ½ cup of pomegranate seeds
  • 1-2 lemons juiced
  • 4 tbsp of olive oil
  • ¼ cup of organic feta (can leave out if dairy free or get cashew feta)

Method:

  • Rinse quinoa and cook until soft. Whilst the quinoa is cooking, prepare the rest of the ingredients.
  • Heat a frying pan and dry roast almonds until brown. Add pumpkin/hemp seeds when the almonds are nearly ready.
  • Chop the baby spinach and fresh mint.
  • Prepare the salad dressing by stirring the lemon juice and extra virgin olive oil together.
  • When the quinoa is cooked, place quinoa/grains in a bowl and allow it to slightly cool before adding the spinach, mint, pomegranate, roasted almonds and pumpkin seeds/hemp seeds fresh mint and mix together.
  • Pour salad dressing over and mix through and your salad is ready to serve – can add some chunks of feta or cashew cheese if you wish or add more lemon juice/pickled red onion as well.
  • Serve alongside other meats, salads and side dishes such as roasted vegetables and enjoy!
