Warming Lentil Dhal Curry

Warming Lentil Dhal Curry

Great for: Lunch / Dinner
Servings: 4-5
Time: 1 hour

 

Ingredients:

  • 5-6 fresh large tomatoes
  • 3-5 fresh curry leaves
  • 1-2 tbsp of dhal curry spice mix (can get these in the spice section)
  • 1-2 stock cubes (organic preferred or bone broth)
  • 1 large brown onion
  • 1 tbsp of minced ginger
  • 1 cup of uncooked yellow dhal lentils (washed/rinsed in sieve)
  • Bag of fresh spinach or 2-4 frozen spinach cubes
  • Serve – cooked basmati, black or brown rice or quinoa.

 

Method:

  1. Dice onion, mince ginger and dice tomatoes.
  2. Fry off onion in a pot with coconut or olive oil until translucent then add ginger and fry off until fragrant then adding spices and cook off for another 30 seconds – 1 minute.
  3. Add diced tomatoes and stir to avoid burning.
  4. Cook stirring for another 2-3 minutes then add in lentils and stir cooking for another 1-2 minutes.
  5. Cover with water adding stock cubes/bone broth.
  6. Cook and regularly stir on low/medium heat to avoid sticking until lentils are tender/soft – turn off heat and stir through fresh spinach to wilt. Taste and adjust as needed – adding more salt/stock if needed.
  7. Serve with chosen grain/rice and some coriander if you wish.
