Warming Lentil Dhal Curry
Great for: Lunch / Dinner
Servings: 4-5
Time: 1 hour
Ingredients:
- 5-6 fresh large tomatoes
- 3-5 fresh curry leaves
- 1-2 tbsp of dhal curry spice mix (can get these in the spice section)
- 1-2 stock cubes (organic preferred or bone broth)
- 1 large brown onion
- 1 tbsp of minced ginger
- 1 cup of uncooked yellow dhal lentils (washed/rinsed in sieve)
- Bag of fresh spinach or 2-4 frozen spinach cubes
- Serve – cooked basmati, black or brown rice or quinoa.
Method:
- Dice onion, mince ginger and dice tomatoes.
- Fry off onion in a pot with coconut or olive oil until translucent then add ginger and fry off until fragrant then adding spices and cook off for another 30 seconds – 1 minute.
- Add diced tomatoes and stir to avoid burning.
- Cook stirring for another 2-3 minutes then add in lentils and stir cooking for another 1-2 minutes.
- Cover with water adding stock cubes/bone broth.
- Cook and regularly stir on low/medium heat to avoid sticking until lentils are tender/soft – turn off heat and stir through fresh spinach to wilt. Taste and adjust as needed – adding more salt/stock if needed.
- Serve with chosen grain/rice and some coriander if you wish.
