Immune Boosting Chicken & Veg Soup
Ingredients:
- Whole organic/antibiotic-free chicken
- 1-2 carrots diced
- 3-4 sticks of diced celery
- 1 sprig of fresh rosemary/thyme/oregano
- 1 onion
- 1 can of cannellini beans./mixed beans washed
- 3-4 cloves of garlic
- 1 knob of fresh turmeric/ 1 tsp of turmeric powder
- 1-3 organic stock cubes/salt/pepper/Nutra Organics stock
- A slow cooker.
Method:
- Dice vegetables and lay in the slow cooker with some olive oil and lay whole chicken on top. Add in the rest of the ingredients and cover halfway with water.
- Cook in slow cooker for 3-4 hours (or until chicken is cooked) – then remove chicken from cooker and shred.
- Add the shredded chicken back to the soup and adjust the flavours until the desired taste is reached.
- Serve and you’re able to freeze as well for meal prep!
Note: If you don’t have a slow cooker, that is fine; you can make the soup in a large soup pot.
